British Savoury pies

There is nothing quite so British as a cottage pie. Tender pieces of meat, mixed with an assortment of chopped vegetables and a flavoursome gravy. Spooned into a casserole, covered with a layer of mash, and tucked into the oven for about 45 minutes. It's the ideal way to stretch out a meal and use up leftovers.

28 March Weekly Menu Plan

Primrose
The magnolia trees are in bloom. The daffodils are out in force and we now have tulips dotted around. Days are still a bit chilly and we run the risk of a hard frost for another 6 weeks. Winter coats have been put away for fleece jackets. My boys are happy  because I've told them they can start wearing shorts to school once school resumes for the Summer Term after Easter. They'll still need those fleeces though for a few more months when they are heading in to school early or leaving later due to clubs.

This week's menu plan is geared towards these warmer Spring days and cooler post-winter evenings.

Monday - Fish pie
Tuesday - Cold sliced beef, green leaf salad, twice-baked potato
Wednesday - Spicy beef hash
Thursday - Fried chicken
Friday - Bangers, mash, and onion gravy
Saturday - Pizza
Sunday - Chicken Roast
Dessert - Butter biscuits with banana custard

Butter Biscuits
This recipe come from my friend, Tina MacDonald.

Ingredients
6 ounces unsalted butter, softened (leave out overnight)
5 ounces granulated sugar
1 teaspoon vanilla
8 ounces self-raising flour

Method
Cream butter and sugar.
Add vanilla
Stir in flour

Form the dough into a log. Wrap in cling film and refrigerate X 20 minutes.

Cut into thin circles. Place on an ungreased baking tray.

Bake at 350F for 15 - 20 minutes.
Makes 30 biscuits.


Banana Custard

Serves 4

Ingredients
4 large bananas
Bird's Custard Powder

Method
Make custard following the directions on the pack. Slice and stir in the bananas while it is still warm.

Serve banana custard warm with the butter biscuits.
